Swedish Meatballs with Mushroom Gravy

Makes approximately 24 meatballs and sauce.

Delicious with our Jalapeno Cranberry Jam.

Ingredients

Meatballs:

• 1.5 lbs ground beef

• 1/2 lb ground pork

• 2 eggs

• ½ cup panko breadcrumbs

• ½ cup grated parmesan cheese

• 2 tsp Livia's Seasoning Salt

Mushroom Gravy:

• 1 tbsp Livia's Seasoning Salt

• 4 tbsp butter

• 1/2 cup button mushrooms sliced

• 2 cloves of garlic minced

• 1/2 a shallot minced

• 1/2 cup of all purpose flour

• 1/2 cup of white wine

• 3 cups chicken stock

• 1 cup heavy cream

• 1 tbsp chopped parsley (optional)

Preparation

Combine all meatball ingredients and mix thoroughly. Portion into 1.5 oz balls, roughly 3 tablespoons, and set aside.

Add the butter to a sauté pan and melt until bubbling.  Working in batches, brown the meatballs on two sides.  Once brown, remove from pan and set aside.  Add the garlic, shallots and mushrooms to the pan and sauté until soft.  Add the flour and stir to combine.  Remove from the pan from the heat and add the white wine.  Whisk well to throughly incorporate the flour into the wine, making sure to make a smooth paste. Add the remaining ingredients, whisking to throughly incorporate.  Slowly bring to a simmer and add the meatballs back into the pan.  Cover and slowly simmer until the internal temperature of the meatballs has reached 160 degrees.
