AO Merc’s Salmon Sheetpan Dinner

Apparatus Operator Jeff Mercer, aka AO Merc, was a firefighter with the Los Angeles Fire Department for over 33 years and was tasked with making dinner at the firehouse several times a week. Here’s one of his favorites using Livia’s Seasoning Salt.

Serves about 6 people | Cook Time 30 mins

INGREDIENTS 

 • Livia’s Seasoning Salt

• 1 pound of baby red potatoes

• 8 oz trimmed green beans

• 1/2 cup of olive oil (divided)

• 1/2 lemon, thinly sliced

• 2 tablespoons of chopped parsley (optional)

PREPARATION

Preheat oven to 400°F. Lightly oil sheet pan with 1 teaspoon of olive oil or line with parchment paper

In a large pot of boiling water, boil potatoes until parboiled for approximately 12 minutes;  drain well.

In a large mixing bowl, toss potatoes with 3 tablespoons of olive oil and season with Livia’s Seasoning Salt to taste; transfer to one side of prepared sheet pan in a single layer.

In the same mixing bowl, toss green beans with 2 tablespoons of olive oil and season with Livia’s  Seasoning Salt; transfer to opposite side of sheet pan in a single layer. 

Place salmon down the center of the sheet pan. Brush with 2 tablespoons of olive oil and season with Livia’s Seasoning Salt. Top with lemon slices.

Place in oven and bake until salmon flakes easily, approximately 16-18 minutes or until internal temperature reaches 145°F. 

Garnish with chopped parsley if desired, and serve with lemon wedges.
