Best Ever Potatoes

I made these potatoes last night and our company raved about them! They probably are the best ever potatoe!. These can be made before hand and baked later. I am making them for my holiday turkey dinners, for sure!!!

3 pounds potatoes – peeled and cubed
1 1/2 qt of chicken broth (I added a little water, too)
4 small carrots cut in 1/2 inch pieces
1/2 of a small onion – chopped
1/4 cup butter
1 tsp dried dillweed
1 1/2 cup sour cream
3 Tbls. parsley
1 1/4 tsp LIVIA”S Seasoning Salt

Put potatoes and broth in big pan and boil. Simmer 15 minutes. Add carrots and onion and simmer 20 minutes until tender. Drain.

Combine vegetables with 1/4 cup butter and dill in bowl – mash. Add sour cream and next three ingredients. Spoon into greesed 11×7 dish. Dot with 1 Tbls. butter.

Cover and bake at 350 degrees for 35 minutes.

Oven-Crisped Potatoes for Two

Ingredients:
2 medium potatoes, peeled and sliced thin
3 Tbs. butter or margarine, melted
1 Tbs. finely chopped onion
1/2 tsp. LIVIA’S Seasoning salt
Directions:
Arrange sliced potatoes in an ungreased baking dish or on a cookie sheet. Combine butter, onion, pepper and salt. Pour over potatoes. Bake, uncovered, at 425 degrees for one hour or until potatoes are tender..

Quiche Lorraine (For a light meal, try this with a salad!)

1 9-inch unbaked pie shell, chilled
1 cup grated swiss cheese
6 slices bacon, browned, drained, crumbled
1 Tbs. flour
3 eggs
1 cup milk
1 Tbs. minced onion
pinch of nutmeg
3/4 tsp of LIVIA’S Seasoning salt
1 Tbsp. melted butter
pinch of sugar
(Cut fresh aspargus, optional)
Directions:
Spread cheese in pie shell. Sprinkle 1 Tbs. flour over cheese. Sprinkle bacon over flour. Mix eggs, milk, onion, nutmeg, LIVIA’S seasoning, melted butter and pinch of sugar together. Pour egg mixture on top. Bake at 400 degrees for 15 minutes, then at 325 degrees for 30 minutes.

Breakfast Casserole (Serves 12)

1 pkg (12 oz) sausage links
6 English muffins, cut into 1 inch cubes
1/4 cup butter melted
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup chopped onion
1/2 cup chopped red pepper
1/2 cup chopped green pepper
1/2 cup sliced fresh mushrooms
12 eggs
2 cups milk
1 1/2 tsp Livia’s Seasoning Salt
5-6 stips of bacon cooked and broken in pieces

Cook sausage and cut into 1/4 inch slices. Put English muffin pieces into greased 9/13 pan, drizzle butter over and layer with sausage, red and green pepper and mushrooms. Then put on top the cheeses and onion. Mix eggs, milk, Livia’s seasoning and pour over cheese. Top with bacon pices.

Cover and refrigerate overnite. Bake at 350 degrees for 45 to 50 minutes. (Knife should come out clean) Bake uncovered
Let stand 5 minutes and serve
(Take out of refrigerator 30 minutes before putting in the oven)
