CROCKPOT POTATO SOUP

Try this easy and delicious soup! So Good!

6 potatoes, peeled and cut into 1″cubes
2 onions. chopped
1 carrot, sliced
1 celery stalk, chopped
4 cups water
1 13oz can carnation milk
1 tsp. cornstarch
1 tsp. flour
2 tsp. LIVIA’S SEASONING SALT
2 Tbls. butter
chives, chopped (Optional)

Put all the ingredients with the exception of the milk, flour and cornstarch in a pot. Cover and cook on low for 10 -12 hours or on high for 3-4 hours. Combine the milk, flour and cornstarch together and add to the pot the last hour. Serve with chives on top.

KRISTEN’S PESTO STUFFED CHICKEN BREASTS

I know everyone is into turkey this week, but come December, try this awesome chicken dish for a holiday dinner. It is easy, and has a great taste ….people will rave about it, promise!!!

Ingredients:
4 split boneless chicken breasts
2 – 3 egg whites
breadcrumbs
canola oil
Equal parts pesto and cream cheese

Directions:

Split the chicken breasts and stuff with pesto and cream chees mixture. Dip the chicken pieces into beaten egg whites and then in the bread crumbs. Fry in the canola oil for about 5 minutes on a side.
Preheat oven to 350 degrees. Cover the chicken and bake for about 30 minutes. So moist and good!!!

Adrienne’s Chicken Salad

Dressing:
2 1/2 Tbls. Balsamic Vinager
1 1/2 Tbls Livia’s Olive Oil
1 1/2 Tbls. minced shallots
2 1/2 tsp. fresh lemon juice
2 1/2 tsp. maple syrup
3/4 tsp. Dijon mustard
1/2 tsp. Livia’s Seasoning Salt
Stir with a wisk

Salad:
2 cups shredded rotsserie chicken breast
2 cups sliced peeled peaches
1/2 cup thin slices red onion
1/4 cup toasted chopped pecans
1 5 oz package gourmet salad greens

Combine, toss with dressing. Top with 2 Tbls. crumbled goat cheese

ONE-POT PASTA

Ingredients:

12 oz linguini
2 cups fresh broccoli florets
1 cup 1″ pieces fresh asparagus
2 cups sliced zucchini
1/2 cup snowpeas
1/2 cup frozen peas
3/4 cup Half and Half
3/4 cup Parmesan cheese
3 tsp. butter
1 1/4 tsp. LIVIA’S seasoning salt

Directions:

Bring a large pot of salted water to a boil. Add linguini and boil for 7 minutes. Gradually add broccoli and asparagus and cook 2 minutes. Gradually add in zucchini snow peas, frozen peas and cook for 3 more minutes. In large bowl put Half and Half, Parmesan, butter and Livia’s Seasoning. Drain pasta and vegetables well. Toss to coat with cream mixture. Serve at once.

Yield: 4 to 5 servings
(Serve with a salad and bread and you have a great dinner!)

ROASTED CALIFLOWER SALAD

Enjoy this yummy salad!

Toss califlower florets with Olive Oil and Livia’s Seasoning Salt and roast at 400 degrees until tender. Let cool. Serve on salad greens with sliced red onions, crumbled feta cheese, chopped almonds and your favorite vinaigrette.

STONE LAKE CRANBERRY FESTIVAL

What a beautiful day we had selling our Livia’s Seasoning Salt at the Stone Lake Cranberry Festival on October 1! It was great seeing familiar faces and meeting new Livia fans. Thousands of people passed by our booth and tasted Livia’s Seasoning on cucumber pieces. (By the way, Livia’s on sliced cucumbers makes a great appitizer!) There was great interest in the gift box of Livia’s Seasoning Salt and Livia’s Olive Oil. We had one to show and hope everyone considers giving the gift box for their favorite cook during the holiday season!
